There are two types of Ouzy, Arabian Middle Eastern that consists of meat, rice, peas, beans filled inside special dough. And Hejaz ouzy that is mildly different.  Ouzy is appropriate for family feasts, given that it requires a lot of fatty meat. It is served with green salad or yogurt and cucumbers.

Ouzy ingredients:

2k AbuKass rice

1 kg meat chops

1 frozen bag peas

2 onions, finely minced

½ cup corn oil

5 cloves garlic

200 grams butter

Salt and black pepper as desired

2 tbsp. spices as desired

2 tbsp. cinnamon

Dough ingredients:

Half kilo flour

300 ml water

1 egg

1 teaspoon salt


In a large pot, add olive oil and brown the ground beef on medium heat. Add peas then salt and pepper, stir together for about 5 minutes. Rinse off soaked rice then cook as usual. When rice is almost done add beef and peas mixture and stir together. Stir gently and cover, then remove and leave aside.

Prepare dough layers; place each sheet in serving soup platter, fill with rice mixture then fold over the sides to form a closed pocket. Brush pockets with oil then cook in oven until pockets are golden brown.
