Turkey Stuffed Liver kidneys

This old Arabic dish is no longer widely spread, except in some Palestinian and Egyptian areas and other rural districts. In other areas of the world it is called offal.

Turkey Stuffed with Liver and kidneys:
3 kg Abukass rice
1 turkey
Half kilo livers and kidneys
Vegetable oil as desired
150 g butter
4L chicken broth
3 oranges, squeezed
100g orange's peel zest
100g butter and 60g flour (mixed together)
2 onions
Vegetables for the turkey:
3 carrots
2 tomatoes
4 celery sticks
1 leek stick
2 tablespoons ground cinnamon
2 tablespoons sweet pepper
2 teaspoons thyme
2 tablespoons tomato sauce
2 tablespoons black pepper
Salt as desired

Clean turkey with cold and running water, place it into a deep bowl, and then add seasoning and set aside.
In a large skillet; stir filling's ingredients starting with vegetables then meat. Add washed rice and mix them thoroughly. Add broth and cook rice as usual. When it's done add extra spices as desired.
Fill turkey, cover oven tray with foil and roast in oven.
